· Steak + wine Don Julio is on this list because no honest Buenos Aires wine ranking can ignore the steakhouse that has built one of the deepest Malbec cellars in the world. Owner Pablo Rivero began collecting in the early 2000s and now holds older vintages of Catena Zapata, Achával-Ferrer and Mendel back to 1995 alongside library bottlings of Carbenet Sauvignon from producers like Cobos.
The list is genuinely encyclopedic and the floor team can navigate it; the by-the-glass rotation is shorter than the bars above but pulls weekly from open older bottles, which is rarer than it sounds. Ranks eighth because the format is restaurant rather than bar, but as a wine cellar attached to a parrilla it has no peer.
