Grant Achatz's cocktail bar is a sister venue to his three-Michelin-star restaurant Alinea. Every drink is a miniature performance. Cocktails arrive in frozen spheres of ice, sealed glass vessels, smoke-filled cloches, or suspended from thin wires.
The drink menu is organized into chapters rather than categories, and the list changes frequently. This is not casual drinking. This is theatre. Expect to spend time, pay premium prices, and have your perception of what a cocktail can be permanently altered.
Reserve well in advance if you want the full seated experience upstairs. But The Aviary also operates the "Office," a walk-in bar downstairs where you can get a taste of the Achatz vision without booking three weeks ahead.
