The Jerry Thomas Project is a hidden speakeasy in Rome named for Jerry Thomas, the 19th century American bartender who wrote the first cocktail book. The bar requires a reservation and a password — sent by SMS the day of the booking.
The cocktails are committed to pre-prohibition discipline. The bartenders work in formal jackets. The drinks are built using period specifications from Thomas's 1862 book and other 19th century sources.
