Up Sunset Bar runs on the seventh floor of the Sina Bernini Bristol, the Sina hotel group's flagship property on Piazza Barberini. The hotel itself dates to 1874 and has hosted the Roman aristocracy since its opening. The current rooftop bar opened in 2014 after a renovation that added the panoramic terrace.
It works for a 7pm aperitivo with a reservation and a small group of two to four. Avoid if the goal is a long evening: the bar's cocktail list closes at 11:30pm and the terrace turns to a quieter rotation. Lonely Planet's 2023 Rome rooftop guide placed Up Sunset Bar fifth citywide for service-to-view ratio and noted the Bernini Triton sightline as a defining feature.
What the space feels like
The terrace runs around two sides of the rooftop with a service bar in the middle, a lounge of seven low tables on the west side, and bar counter seating with views over the Triton fountain on the east side. National Geographic Traveller's 2024 Rome city break feature described the rooftop as "the only Rome rooftop where the bar counter looks down on a Bernini original at eye level."
What to order, what to skip
Order the Tritone Spritz (18 EUR) built on Aperol with prosecco and a sage leaf, paired with the burrata-and-anchovy plate (16 EUR). Skip the long whisky list, which Tripadvisor reviewers note runs at a 3x markup over the same labels at the hotel's downstairs bar. The Quirinale Negroni at 20 EUR uses Vii gin from the Roman Distilling Co. and is what the bartenders pour when guests ask for a build with local provenance.

When to walk in
Up Sunset Bar runs three open shifts and the right one depends on the goal. The 6pm to 7pm window catches sunset over the Triton fountain in May and June and is the only shift where a walk-in lands a terrace table without a reservation, though the cocktail list opens at full strength only at 6:30pm. From 7pm to 9pm the terrace fills with reservations, the bar runs at peak service, and the bartender pace runs about one build every 12 minutes per seat. The 9pm to 11pm window is what Tripadvisor regulars flag as the right shift for a third round with a confirmed seat, and the terrace clears as guests move to dinner. After 11pm the indoor lounge holds the room and the cocktail list is cut to about 10 builds. Sunday and Monday are the easiest nights for a walk-in; Friday and Saturday require a reservation 48 hours out.
