We are not ranking these by award citations. The award circuit is useful but slow, and it tends to celebrate longevity as much as current excellence. We ranked these bars by what they offer right now: the quality of the drinks, the knowledge of the staff, the intentionality of the menu, and the overall coherence of the experience. Our editors visited each city specifically for this list in 2024 and 2025.

New York
Death and Company
The bar that defined the American cocktail revival for a decade and continues to lead by refusing to repeat itself. Seasonal menus, extraordinary spirits depth, and a bar team that has produced more celebrated alumni than any cocktail programme in the country. Dante NYC
The world's best bar in 2019 and still operating at the level that earned it. The Negroni programme alone is worth the visit: 12 variations on the classic, each rooted in genuine understanding of how the architecture of the drink responds to spirit substitution. The Greenwich Village room is warm and unhurried in ways that most cocktail bars in New York fail to be. Attaboy
No menu. You tell the bartender what you like, what you have had recently, how you feel, and they create something specifically for you. This format works because the team is exceptional. The original Milk and Honey space on Orchard Street carries significant cocktail history, and Attaboy honours it without being captured by it. BlackTail
Dedicated entirely to Cuban cocktail culture and the pre-embargo American relationship with Havana. The daiquiri programme is the most comprehensive study of the drink available anywhere in the United States. Every detail, from the rum sourcing to the ice programme to the colour of the lighting, has been assembled with the specific intent of creating a coherent world. Chicago
The Aviary
The most technically ambitious cocktail programme in the US. Drinks arrive in custom vessels, some assembled at the table, all of them informed by the culinary thinking of Grant Achatz's restaurant empire next door. This is not a bar you visit for a casual drink. It is a bar you visit to understand the outer boundary of what a cocktail can be when technique and intention are applied without compromise. Boka Bar
The cocktail programme at the bar attached to Boka restaurant operates at the same level as the kitchen. Seasonal, precise, and rooted in the culinary philosophy that characterises the broader Boka Group. The room is one of the most beautiful bar spaces in Chicago, and the team's attention to the guest experience is among the most consistently excellent in the city. Bar Jackalope
The LA cocktail bar that the industry votes for when it is being honest. Accomplice Bar

New Orleans

Velveteen Rabbit, Las Vegas
The cocktail bar that the Strip does not produce but downtown Las Vegas does. Hotel Congress Bar, Tucson
An honourable mention for a city outside the major markets: the Hotel Congress Bar in Tucson has operated in the same historic building since 1919 and the cocktail programme has evolved without disturbing the architecture or the character. John Dillinger was arrested here in 1934. The cocktails are significantly better now than they were then, and the desert-influenced ingredient sourcing gives the menu a specificity that belongs to no other city in the country.
Washington DC and Philadelphia
Columbia Room, Washington DC
Derek Brown's cocktail bar in Shaw operates three distinct rooms with three distinct experiences, from a punch room for group drinking to a tasting menu format that treats cocktails with the same structure as fine dining. DC's cocktail scene has developed considerably over the past decade and Columbia Room is its highest expression. The tasting menu format is expensive and requires reservation; it is among the most intellectually engaging cocktail experiences available in the United States.
Hop Sing Laundromat, Philadelphia
One of the most eccentric cocktail destinations in America: strict rules about photography and conversation volume, an unmarked door, a proprietor with strong opinions about how you should experience the bar. The cocktails are exceptional. The experience is singular. Donna, Brooklyn
Brooklyn's most consistent cocktail bar and one that demonstrates the borough's claim to independence from Manhattan's bar scene. The programme is rooted in rum and tropical spirits with a depth that challenges the rum bars of Miami and New Orleans. Donna operates as a neighbourhood bar first and a cocktail destination second, which is the correct order of priority and produces better results than the reverse approach.
False Idol, San Diego
A tiki bar that takes the format seriously: genuine tropical spirits education, proper ice programme, and a rum library that exceeds most dedicated rum bars in the country. Hidden beneath a restaurant via an unmarked entrance in Little Italy, False Idol operates at a level that proves San Diego's cocktail scene deserves a place in the national conversation.
