First date rating: Very strong. The all-French spirits rule makes the bar instantly interesting to explain. Excellent cocktails.
A cocktail bar in a former trade union office that serves only French spirits — Armagnac, Calvados, eau-de-vie, and pastis — in a programme that has won European awards. The concept is genuinely interesting, the room is candlelit and intimate, and the bartenders are among the most engaging in Paris. Book ahead on weekends.

The bar where Hemingway claimed to have liberated Paris in 1944 with a group of journalists. A wine bar near the Marche d'Aligre where you can fill your own bottle directly from the barrel, or drink a glass standing at the pavement tables. On Sunday mornings it overflows with locals eating oysters. On weekday evenings it is the most local experience in the 12th. The wine is good and extremely cheap. This is Paris unperformed.
