If you're committed to watching the fireworks from a rooftop, Aurelius is the most considered version of that experience. The bar occupies the top floor of a boutique hotel on the central Strip, with floor-to-ceiling glass facing the boulevard. They limit NYE tickets aggressively — only 120 guests — and the entrance price includes a champagne service at midnight plus a cocktail on arrival. The view across the Strip as midnight approaches is genuinely worth the premium.

Order: The house champagne cocktail at midnight, then the Elderflower Gimlet for the rest of the evening

Las Vegas's Chinatown neighbourhood has developed a genuinely good bar scene over the past five years, and Nightbloom sits at its centre. The cocktail menu draws heavily from Japanese and Southeast Asian ingredients — yuzu, shiso, chrysanthemum, lychee — built into drinks that are technically accomplished without being theatrical. NYE brings a slight premium on pricing but no performance, just very good drinks in a beautiful room.

About 20 minutes from the Strip, The Occidental Room is the closest thing Las Vegas has to a proper old American saloon — dark wood, a long mahogany bar, and a menu focused on pre-Prohibition classics executed without fuss. They put on a small but well-chosen NYE programme: live jazz trio, no cover charge if you have a reservation, and a midnight Krug toast included in the booking.

Order: Martinez or a well-made Manhattan — this is the right room for both

Solstice operates out of a converted mid-century bungalow with an enclosed garden terrace that comes into its own on warm desert evenings. The drinks programme rotates seasonally and is genuinely one of the most considered in the city outside the Strip hotel bars. NYE here attracts a local crowd in their 30s and 40s who appreciate the outdoor firepit area and the fact that you can actually hear the person you're with.

Order: Aperol Tequila Spritz or the rotating seasonal punch — made in batches and served from a large crystal bowl

Overlooking the Wynn's atrium lake, Parasol Up is one of the few casino bars that earns its prices through genuine cocktail quality rather than location alone. The bar team changes the menu quarterly and sources ingredients with the kind of specificity you'd expect from an independent operation. On NYE the atrium fills with revellers but the bar itself has a dedicated section for table holders — book a month in advance at minimum.

Order: The house Negroni variation — currently made with Campari, barrel-aged gin, and a Lillet Blanc split

The Dorsey is a properly designed cocktail bar that happens to sit inside a casino hotel — a distinction that matters. The room reads dark and unhurried, the cocktail list leans on American classics with precise modern riffs, and the bartenders can hold a conversation and make your drink at the same time. On NYE, walk-ins become difficult after 8pm, but a 5pm reservation that runs through to midnight is a completely viable and excellent strategy.

Order: Penicillin or the house-made Margarita with smoked salt rim

Fifty-five floors up with a partially glass floor and a view that covers the entire valley, Ghost Bar has been doing NYE countdowns for over two decades and has the logistics down. They ticket the event separately from the venue's regular operation — included is a champagne service, a DJ set from 9pm, and access to the outdoor terrace section that gives you a direct line of sight to the fireworks on the Strip below.
