The view of St Paul's through the gap between buildings at dusk is one of the better architectural moments in any London bar.

Mexico City sits at 2,240 metres, which gives the sky here a size and saturation found almost nowhere else at ground level. Terraza del Cielo in Polanco occupies the full roof of a 1950s hotel, and the DJ starts at 7pm on weekdays. Mezcal cocktails are the house speciality, and the Monday-to-Thursday crowd is overwhelmingly local. Arrive before 6:30pm to get the front rail before the rush. The hour between 7 and 8pm, with the sky going dark and the music starting, is exactly what a Mexico City rooftop should feel like.

Sydney's famous harbour sunsets draw the crowds to Circular Quay. Horizon Social Club in Surry Hills works a different angle entirely, facing northwest across the inner city toward the Blue Mountains. The bar is deliberately low-key: Australian natural wines, a focused spirits list, and bar snacks built around local producers. It is the anti-spectacular sunset bar, and that turns out to be exactly what Sydney needed. The crowd is 90% neighbourhood regulars, which is the right atmosphere.
