Utrecht's canal-cellar bars are unique in Europe. The Oudegracht runs nine metres below street level and the cellars at canal level were built in the 1300s as wharfside storage. Today they hold the most atmospheric drinking rooms in the Netherlands. Around the heritage layer, the Utrecht student-and-creative scene built a serious cocktail wave.

Five neighbourhoods cluster the action. The Oudegracht is the canal-cellar spine. Wittevrouwen runs the residential boutique-bar quarter. Lombok is the multi-cultural creative district. Nieuwegracht holds the polished restaurant-bar layer. Vredenburg covers the modernist downtown bars.
