wine · Modern Sarabán in Chueca is the post-Tres por Cuatro natural-wine room that took the format and pushed it slightly more refined and slightly more food-led. The list balances Spanish naturals with an unusually serious German and Austrian bench, and the by-the-glass programme runs eight to ten references that rotate weekly.
The kitchen runs a small, careful tasting-plate menu, and the room handles solo drinkers as easily as full groups. It ranks seventh for the rotation discipline and for being the bar that pulled Chueca — historically more cocktail-oriented — into the Madrid natural-wine conversation in a serious way.
