Caporale and Alvarez's Eixample Cocktail Compound
Sips Drinkery opened in 2021 from Simone Caporale (formerly of Artesian London) and Marc Alvarez. The bar has been ranked in the World's 50 Best Bars top 5 since opening. The Eixample compound includes a casual front room and a more formal cocktail room behind.
The cocktail programme is modern and technically precise. The drinks lean toward unusual ingredient pairings and use serious technique — clarifications, fat-washing, foams. The seasonal menu rotates regularly.
