Whisky in a Victorian Pump House
Devil's Advocate occupies a converted Victorian pump house at the bottom of Advocate Close in the Old Town. The space is dramatic — exposed stone walls, vaulted ceilings, and a long industrial bar. The whisky list runs to over 200 Scotches with a focus on independent bottlers and rare casks.
The cocktails are well built and use Scotch heavily. The Penicillin is a benchmark. The whisky tasting flights are thoughtfully constructed — three drams of related styles for around £30 — and the bartenders are knowledgeable.
