Our Take on Gravity Bar

The interior — a wave-like wooden ceiling that arcs from front door to back wall — is the obvious feature, but the real reason to come is the menu. The drinks are short, dry, and unusually disciplined for a Paris cocktail bar. House-made cordials, fermented bases, and uncommon spirits do most of the work; gimmicks do almost none.

The signature Smoke on the Water — mezcal, fresh celery, fennel oil, a long lemon zest, smoked over applewood at the table — is the drink to order first. The Apricot Sour is the room's quiet masterpiece: a single Armagnac base, fresh apricot, lemon, and a hint of lapsang souchong syrup. Both are short pours, served cold, served small.

Gravity is the kind of bar that rewards a conversation with the bartender. The list is intentionally compact and the team would rather build you something off-menu than upsell the obvious choice. Two drinks here is an evening; three is a memorable one. The walk back along the canal at night is part of the experience.

Best time to visit: Weeknights early evening for a quiet seat at the counter; weekends require reservations. The room is at its best between 8pm and 11pm.
