Bar Hemingway at the Ritz is named for Ernest Hemingway, who liberated the Ritz bar at the end of World War II and drank here regularly. Colin Field ran the cocktail programme here for over 30 years until 2024, building a global reputation for the most disciplined classical cocktails in Paris.
The cocktails are immaculate. The Clean Dirty Martini, the Serendipity (Cognac, fresh mint, apple juice, Champagne), and the Picasso are all signature. Prices are the highest in Paris (€36 per cocktail) but the experience is unmatched.
