What this place is and who it is for

Etabli sits on Vicolo delle Vacche, a side street a single block north of Piazza Navona, inside a 16th-century palazzo whose ground floor was converted to a French-styled brasserie and cocktail bar in 2011. The owners run it as a working aperitivo room from 12:30pm and a cocktail bar from 6pm, six days a week. Monday is closed.

It works for a pre-dinner Negroni for two in the front room or a long dinner-into-drinks evening in the back lounge with a reservation. Avoid if the goal is a quick stop or a budget aperitivo: the spritz runs 14 EUR and the table service is slow. The Infatuation Rome 2024 guide placed Etabli third for “best fireplace cocktail bar in Centro Storico” and noted the Provencal courtyard as the seat to ask for.

The Room

What the space feels like

Two main rooms plus a small interior courtyard. The front room runs as a 22-seat bar with a marble counter on the south wall and an open fireplace on the north. The back room is a 30-seat brasserie with low timber tables and Provencal linen. Conde Nast Traveller's 2023 Rome city guide described the room as “the closest a Roman cocktail bar gets to a Marseille bistro at 9pm” and singled out the fireplace seats as the late-shift target. The lighting is candles plus a single tungsten pendant per table.

The Drinks

What to order, what to skip

Order the Etabli Negroni (19 EUR) built on Plymouth gin with a house-aged Campari and a Mancino vermouth, served with a clementine peel. Pair it with the burrata-and-saffron plate (16 EUR). Skip the house spritz at 14 EUR, which regulars on r/rome consistently flag as the weakest pour for the price; the Picon Punch (17 EUR) is the build the bartenders pour when guests ask for a French-leaning option. Wine list runs 9 EUR to 28 EUR by the glass with a Roman Lazio bias.

Three distinct shifts run through the night. From 12:30pm to 5pm the brasserie holds a working-lunch crowd of Roman professionals and a slow turnover of pre-aperitivo regulars. From 6pm to 9pm the front bar fills with Centro Storico locals and Hotel de Russie guests. From 9pm to 2am the lounge holds the post-dinner shift. The Financial Times' 2023 Rome weekend feature noted that the back lounge “runs as the late-shift fireplace bar for the Piazza Navona hotel guests after their restaurant rotation closes.

Best time to go

When to walk in

Etabli runs three shifts and the right one depends on the goal. The 12:30pm to 5pm window catches the working-lunch crowd and is the only shift where a walk-in lands a brasserie table without a reservation. From 6pm to 9pm the front bar fills with reservations and the bar counter runs at peak service; a walk-in works if the group is two and is willing to stand. The 9pm to midnight shift is the iconic Etabli experience and a walk-in works if the courtyard is in season and the group is willing to sit outside. After midnight the lounge holds the late shift and the cocktail list is cut to about 12 builds. Monday is closed; Friday and Saturday require a reservation 72 hours out. The fireplace lights from November through March only.
