Avoid if the goal is a quick stop or a budget aperitivo: the spritz runs 14 EUR and the table service is slow. What the space feels like
Two main rooms plus a small interior courtyard. The front room runs as a 22-seat bar with a marble counter on the south wall and an open fireplace on the north. The back room is a 30-seat brasserie with low timber tables and Provencal linen. The lighting is candles plus a single tungsten pendant per table.

Order the Etabli Negroni (19 EUR) built on Plymouth gin with a house-aged Campari and a Mancino vermouth, served with a clementine peel. Pair it with the burrata-and-saffron plate (16 EUR). Skip the house spritz at 14 EUR, which regulars on r/rome consistently flag as the weakest pour for the price; the Picon Punch (17 EUR) is the build the bartenders pour when guests ask for a French-leaning option. When to walk in
Etabli runs three shifts and the right one depends on the goal. The 12:30pm to 5pm window catches the working-lunch crowd and is the only shift where a walk-in lands a brasserie table without a reservation. From 6pm to 9pm the front bar fills with reservations and the bar counter runs at peak service; a walk-in works if the group is two and is willing to stand. The 9pm to midnight shift is the iconic Etabli experience and a walk-in works if the courtyard is in season and the group is willing to sit outside. After midnight the lounge holds the late shift and the cocktail list is cut to about 12 builds. Monday is closed; Friday and Saturday require a reservation 72 hours out.
