Bar Spectre opened in 2022 on the second floor of a Stanley Street shophouse, three minutes from Telok Ayer MRT. The entrance is an unmarked door beside the ground-floor Italian restaurant and the upstairs room runs as a 28-seat speakeasy with an absinthe-led programme. It is closed Sunday and Monday and stays open until 2am Tuesday to Saturday.
The bar works for a 9pm Sazerac at the counter or a late booth shift with two or three friends. Avoid if the goal is a budget cocktail or a stand-and-drink crowd: the booking-only door policy and 24 SGD floor on builds make it a destination bar. The Straits Times Life called Bar Spectre “the most considered absinthe service in Singapore” in its 2023 cocktail bar feature.
What the space feels like
A single 28-seat room with an 8-seat black-marble counter on the south wall, three velvet booths on the north, and a small standing-room nook at the entrance. The lighting is candles plus a single low pendant per booth; the walls are dark green with a 19th-century Parisian apothecary tile pattern. Lifestyle Asia's 2023 bar feature called the booth setting “the best candlelit seat in Telok Ayer for a Sazerac at 10pm.” The absinthe service runs from a brass fountain at the counter.
What to order, what to skip
Order the Spectre Sazerac (26 SGD), built on the house absinthe rinse with a 100-percent rye base and a lemon zest; it is the build that the lead bartender prepares table-side on a brass cart. Pair it with the foie-gras-and-fig small plate (22 SGD). Skip the seasonal menu; regulars on the Singapore bar community Telegram channel consistently flag the printed programme as the strong move. The absinthe service at 22 SGD runs through a brass fountain at the counter and is what the bartenders pour when guests ask for a 1900s build.
Who shows up and when
Two shifts. From 6pm to 9pm the room runs a post-work CBD crowd of finance and law professionals on the way home through Telok Ayer. From 9pm to 2am the booths fill with a date-night and small-group crowd, mixed local and visitor. World's 50 Best Bars 2024 panel notes described the late-shift crowd as “Telok Ayer's quiet alternative to the loud Amoy Street rotation.
When to walk in
Bar Spectre runs two shifts and the right one depends on the goal. From 6pm to 9pm the counter is the easiest walk-in for a Sazerac and the booths run a CBD post-work crowd that turns over by 9pm. From 9pm to 2am the booths are 100 percent booked, the counter turns over once, and the cocktail list runs at peak service. After midnight the room is mostly hospitality-trade nightcap and date-night holdovers. Tuesday and Wednesday are the easiest nights for a booth walk-in; Friday and Saturday require a reservation 72 hours out. The absinthe service runs at the counter only and is the right first-visit order.
