What this place is and who it is for
The Spiffy Dapper sits in a 1920s shophouse at 73 Amoy Street, opened in 2013 by Australian bartender Jason Williams. The ground floor is a 12-seat counter and four high-tops; the first floor is a 28-seat reservation-only lounge with banquettes and a small back nook. The format is bartender-driven: a printed menu of 10 builds and an off-menu programme that runs longer than the printed one.
It works for a Monday or Tuesday walk-in at the counter and for a Thursday upstairs reservation that lets a group of six take the back nook. Skip the Friday late-night visit without an upstairs booking; the lounge is 100 percent booked Thursday to Saturday. Asia's 50 Best Bars Discovery 2023 list included The Spiffy Dapper for its “Williams-era house style and the most consistent off-menu programme on Amoy Street.
What the space feels like
A 1920s shophouse with two personalities. The ground floor is a 12-seat counter on the right wall with four high-tops and an open kitchen window; the first floor is a 28-seat lounge with banquettes and a small back nook. The Peak Singapore's 2023 bar feature described the upstairs as “the most considered Amoy Street lounge, the one with the back nook the regulars know to book three days out.” The lighting stays warm and the playlist runs to vintage jazz.
What to order, what to skip
Order the bartender's choice off-menu (28 SGD); brief the bartender on a spirit, a flavour, and a strength and the drink lands in six minutes. Skip the printed list without a recommendation; Reddit's r/singapore Amoy Street thread consistently calls the off-menu programme “the right reason to come, the printed menu is a fallback.” The Williams Martini, the house variant on a Dirty Martini built by Jason Williams (26 SGD), is the off-menu pour that regulars order for a closing drink.
Who shows up and when
Three shifts. From 6pm to 8pm the counter pulls Amoy Street and Telok Ayer after-work professionals for the early cocktail. From 8pm to 11pm the upstairs lounge runs at peak service with a 60 percent local Singapore couples crowd and a 40 percent group-of-four mix. After 11pm the room turns to a hospitality nightcap and the counter stays open until 2am Monday to Saturday. The Infatuation Singapore's 2023 cocktail bar feature called The Spiffy Dapper “the Amoy Street counter the bartender community drinks at after their own shift ends.
When to walk in
The Spiffy Dapper runs three shifts and the right one depends on the goal. From 6pm to 8pm the counter is the spot for a walk-in cocktail and a bartender's choice off-menu. From 8pm to 11pm the upstairs lounge runs at peak service and reservations are essential for a Thursday booth three days out. After 11pm the room turns to a hospitality nightcap shift and a walk-in works at the counter every night except Friday. Monday and Tuesday are the easiest walk-in nights upstairs. Sunday is closed.
What regulars say
Pick this if
- A Monday counter walk-in for a 28 SGD bartender's choice off-menu
- A Thursday upstairs booking for a group of six in the back nook
- A 1am hospitality nightcap at the counter on a Tuesday
- Avoid the Friday upstairs without a three-day-out reservation
