Bar X sits in the basement of the Mercado de Colon, Valencia’s modernist market landmark, and runs noon to midnight every day with no reservations and a kitchen that never pauses. It is chef Ricard Camarena’s casual flank; his flagship restaurant holds two Michelin stars.
