American aperitivo has stopped being a borrowed format and started being its own thing. Nine US cities now run aperitivo programmes that an Italian bartender would recognise. The shortlist below ranks the cities by depth of programme, not population.
New York leads on density (Dante, Bar Pisellino, Maialino). San Francisco runs the longest standing scene (Tosca Cafe, Bottega). Boston punches above its weight (SRV, Yvonne's). Chicago, Miami, Los Angeles, Portland, Washington DC and New Orleans round out the list. Spritz prices range from $11 (Chicago) to $19 (NYC, LA). Most rooms run aperitivo from 5pm to 7pm with bar snack discounts; Italian style buffets are rarer.
Aperitivo as a format means three things: a bitter or vermouth driven drink before dinner (Americano, Negroni Sbagliato, spritz), a bar snack programme included or discounted with the drink, and a specific 5pm to 7pm window. American bars increasingly run all three. The Wall Street Journal's spring 2025 piece on the American aperitivo boom cited 18% growth year over year in spritz sales at full service restaurants since 2022.
This list ranks by depth of programme. Two cities with one great aperitivo room are not ranked above a city with six honest aperitivo rooms across multiple neighbourhoods. The geography matters: a city with aperitivo concentrated in one walkable neighbourhood (Boston's North End, NYC's West Village) earns more than one with aperitivo bars scattered across 20 miles.

New York runs the country's deepest aperitivo programme. Dante on MacDougal won World's 50 Best Bars' top spot in 2019 on the strength of its Negroni and aperitivo programme and remains the city's most recognised aperitivo room. Bar Pisellino across the street runs the daytime only Italian standing bar format. Maialino in Gramercy Park, Bar Primi in NoHo, and Lilia in Williamsburg complete the West Village to Brooklyn aperitivo route.
The Times' restaurant section has covered the city's aperitivo scene as a defining format of 2020s New York hospitality. Spritz prices are the country's highest at $16 to $19 at the destination rooms.

San Francisco's aperitivo scene predates the recent New York boom by decades. Tosca Cafe in North Beach has run a working aperitivo programme since 1919. Bottega on Columbus, Cotogna in Jackson Square, and Original Joe's in North Beach keep the format alive across multiple neighbourhoods. The San Francisco Chronicle's drinks coverage has called North Beach the country's most walkable aperitivo neighbourhood.
Tosca's 2021 reopening cemented the room's place in modern American aperitivo. Prices are 15% below New York's.

Boston punches above its weight. The North End holds the country's tightest geographic concentration of aperitivo rooms outside the West Village. SRV in the South End, Yvonne's near Downtown Crossing, and Coppa in the South End run year round aperitivo programmes. Boston Magazine's annual guide has tracked the city's aperitivo growth as a defining 2020s hospitality trend.

Chicago runs the country's best value aperitivo. Italian Village in the Loop has held a working aperitivo since 1927. Formento's in West Loop, Coda Di Volpe in Lakeview, and Bar Cargo in River North run modern programmes. Eater Chicago's 2025 guide called the city the country's best for aperitivo on a budget. Spritz prices run 30% below New York's.

Miami's aperitivo scene runs heavy on the patio and sunset format the city does best. Macchialina in South Beach, Sereia in Coconut Grove, and Casa Tua in South Beach lead the list. The Miami New Times' bar coverage has flagged the city's aperitivo growth as the defining hospitality trend since 2021 of the South Beach scene.
Recommended start: Macchialina's spritz menu at the patio. Best night: Thursday 6pm.
LA's aperitivo scene runs scattered across the city but concentrates in three pockets. Bestia in Arts District, Felix Trattoria in Venice, and Mother Wolf in Hollywood lead the list. The LA Times' food section has named Mother Wolf the city's defining new aperitivo room since opening in 2022. Spritz prices run close to New York's.

Three cities running serious aperitivo programmes that earn the list even with a smaller scene. Each holds at least two destination rooms.
Portland's aperitivo scene leans amaro and bitter led rather than spritz driven. Nostrana in Inner Southeast, Ava Gene's in Belmont, and Bar Diane in Northwest run weekly aperitivo programmes. The Portland Mercury's annual bar guide has flagged the city's small batch bitter programmes as the country's most distinctive aperitivo scene.

DC runs aperitivo around the early evening schedule of the political class. Centrolina in CityCenter, Tosca downtown, and Bresca on 14th Street lead the list. The Washington Post's food section has tracked the city's aperitivo growth since 2022 as a defining format of the Penn Quarter scene.
Recommended start: Bresca's 5pm spritz menu. Best night: Wednesday 6pm.
New Orleans aperitivo runs on the city's deep cocktail-bar culture rather than imported Italian format. Cure on Freret, Bar Tonique in the Quarter, and Compère Lapin in the Warehouse District run amaro and classic cocktail programmes that earn the aperitivo label. The Times-Picayune's bar coverage has tracked the format's rise alongside the city's classic cocktail revival.

American aperitivo splits cleanly into format types. The Italian import format (Dante, Tosca, Maialino) runs the classic recipes and dim rooms. The American original format (Cure in New Orleans, Bestia in LA, Mother Wolf) interprets aperitivo through the local cocktail scene. Both earn the list.
For a weekend built around aperitivo, New York, San Francisco and Boston each support a full three day itinerary. For a single great aperitivo dinner, any of the nine cities works. The price spread is real: Chicago and New Orleans run 30% cheaper than New York and Los Angeles.
