Riviera is one of Sao Paulo's oldest continuously operating bars, opened in 1949 as a simple cafe and transformed over decades into something more artful. Filial operates out of a converted house in Itaim Bibi and makes almost no effort to attract attention. The entrance is unmarked, the room holds 30 people comfortably, and the cocktail list is a love letter to Brazilian native spirits: cachaca, amburana-aged aguardente, cerrado botanicals. Head bartender Pedro Moreira spent three years in London before returning to build this. It shows.

Veloso is where Sao Paulo's creative class ends up at 1am when everywhere else has started to feel predictable. The bar opened in 1965 and has kept the same bones: tiled floors, a narrow counter, music loud enough to stop you finishing sentences. The Caipirinha here remains the city's best, pressed with sea salt, no sugar, enough lime to make your jaw work. Ask for the off-menu Mezcal Veloso.
