Cairo does not hand out its bars to a casual visitor. The good ones sit in passageways off Talaat Harb, up the stairs of a tired hotel, or behind a door with no sign and free lupin beans on the counter. The city calls these baladi bars, the local answer to a dive. We judged these on history, atmosphere, and whether they still pour a cold Stella decades on.

For one room, make it Cap d'Or. More than a century in, the Art Nouveau fittings and the free termis still make it the most atmospheric old bar in Downtown. For history with a crowd, El Horreya and Cafe Riche carry the most weight.
Cairo rewards going Downtown and going local. Most of these serve Stella and Sakara rather than cocktails, and the charm is in the room and the regulars rather than the list. Carry small cash, go in the evening, and treat the waiters with the respect a hundred year old bar has earned.
