    Guilhotina

    Guilhotina has sat on The World's 50 Best Bars list since 2019 and stays a fixture of Latin America's 50 Best. Ale D'Agostino runs the room low and steampunk dark, with an alfresco terrace strung in small lights. Order the Vitriol, a whiskey sour rebuilt with raspberry, ginger and a Negroni float. Pinheiros, on Costa Carvalho. Best after 8pm, Wednesday to Saturday, for serious drinkers who want craft without ceremony.

    SubAstor

    SubAstor hides a flight of stairs below Astor in Vila Madalena, behind red velvet, past mirrored columns and walls lined with bottles. The mixing leans Brazilian, with açaí, caju and cachaça threaded through a precise list. This is a date room first, dim and a little secretive, best from 9pm onward. There is a second outpost at Bar do Cofre near Paulista. Reserve on weekends, when the small space fills fast.

    Riviera Bar

    Riviera holds the corner of Avenida Paulista and Consolação, open since 1949 and relaunched in 2013. It now runs 24 hours, so it reads as a late-night anchor and an afternoon perch in equal measure. The room is roomy and comfortable, with live music and a rotating cultural program. Order a Maria Mole or the Famous Avenue. Best for people who want a drink at an hour nothing else keeps. Consolação.

    Piselli

    Piselli is a Jardins institution, an Italian dining room since 2004 with a classics-led bar built into it. Expect a Negroni Invecchiato, a clean Godfather, paintings by Dalmau overhead and a chandelier by Joana Vieira. The parklet out front works as a pre-dinner spot for a drink. This one is for an older, dressed crowd over dinner, not a late session. Book ahead.

    Caracol

    Caracol works two floors and a terrace on Rua Boracéa in Barra Funda, a listening bar that tips into a club as the night warms. Early on it stays calm enough for dinner, with cocktails built on real technique alongside house wines and craft beer. After 11pm the DJ programming takes over and the tempo climbs. Best for a night that starts with a drink and ends on the floor. Check the lineup first.

    Skye Bar

    Skye crowns Hotel Unique, that ship-hull landmark in Jardim Paulista, with a crimson rooftop pool and a long view over Ibirapuera and the skyline. Chef Emmanuel Bassoleil oversees the kitchen and the room runs DJs on weekend evenings. Come at sunset for the light off the pool, then stay for a cocktail as the city switches on. This is for a view and an occasion. Reserve, and dress the part.

How SP cocktailing fits its city

São Paulo is enormous and the cocktail bars are spread across multiple neighbourhoods. Pick one neighbourhood per evening. The cachaça programs are taken very seriously here. The 10 above represent the modern peak.
