Florence invented the Negroni in 1919 at Caffè Casoni, and the city's bar scene still runs on that elegant excess — bitter, balanced, never showy. Aperitivo is a religion here. From 6pm the squares fill, the spritzes pour, and the small dishes keep coming until 9pm.
Five neighbourhoods cluster the action. Oltrarno across the Arno is the artisan-drinking district — natural wine, vermouth bars, and Florentine cocktail rooms. Santa Croce is the late-night centre. San Niccolò climbs uphill toward Piazzale Michelangelo with sunset spritz terraces. Centro Storico hides the heritage cocktail rooms inside Renaissance palazzos.
Spritzes run €6 to €10. Cocktails €10 to €14. Aperitivo runs from 6pm to 9pm at most rooms — order a drink and the cicchetti come free. Tipping is not expected. Reserve the palazzo cocktail rooms (Locale, Atrium) on Friday and Saturday.

Oltrarno
Across the Arno from the centre. The artisan drinking district — natural-wine cellars, vermouth bars, and the city's more adventurous cocktail rooms. Walk between everything in twenty minutes.
Santa Croce
The late-night centre. Around the basilica's piazza you'll find spritz bars, wine cellars, and the city's loudest aperitivo crowds. Best on a Thursday or Friday from 7pm.
San Niccolò
The hill climbing toward Piazzale Michelangelo. Sunset terraces and small wine bars. The most romantic neighbourhood for a drink, especially in summer.
Centro Storico
The Renaissance heart. Heritage cocktail rooms inside palazzos, the original Negroni bar, and the city's most beautiful aperitivo terraces overlooking the Duomo.
Sant'Ambrogio
The market district. Locals drink here at lunch and after-work. Wine cellars, small enotecas, and the Sant'Ambrogio market's bar at the centre. Cheaper than the centre, more authentic.
