Lima invented the pisco sour and never stopped iterating it. Four years running, two Lima bars have ranked in the World's 50 Best Bars list. The Peruvian-pisco style is dramatically different from Chilean — grape-forward, aromatic, often more expressive. The cocktails built around it are some of Latin America's finest.

Five neighbourhoods cluster the action. Barranco is the bohemian art-and-cocktail district. Miraflores wraps the Pacific cliffs with rooftop terraces. San Isidro is the polished business district. Centro Historico holds the heritage bars. Surquillo is the new craft-cocktail quarter.

Cocktails run PEN 30 to PEN 55 ($8 to $15). Tip 10 percent. Most bars run to 2am, the Barranco rooms to 4am Friday and Saturday. Reserve Carnaval and Lady Bee — both World's 50 Best regulars.
