Brown Sugar

The room seats around eighty across two levels. The downstairs counter faces the stage; the mezzanine has table seating and a slightly cooler temperature. The house quartet plays Tuesday through Sunday with a single set each evening (9pm to midnight) and a second set on weekends. Visiting acts from Tokyo, Singapore, and Manila rotate in two or three weekends a month.

The cocktail list runs long — over forty drinks, with the bartenders happy to build off-menu requests. The Old Fashioned and the Manhattan are the classical builds the regulars order. The signature Brown Sugar Sour (bourbon, fresh lemon, palm sugar syrup, egg white) is the room's house drink and one of the better sours in the city. The kitchen does Thai-Western pub food until 1am.

Cover is rarely charged. The crowd is mixed — local regulars, expats, jazz tourists — and the dress code is relaxed. Two cocktails and a long set is the right pacing here. Walk-ins are welcome; reservations help on weekend nights with visiting acts.
