Our Take on Singing Bird
The room seats around twenty-four — eight at the bar counter, sixteen at low tables facing the speakers. The vinyl programme rotates nightly between resident DJs who lean into jazz, soul, deep house, ambient, and occasional rare-groove. No cover. Bookings are essential for table seats; counter seats are walk-in.
The cocktail list is short — twelve drinks, all built around premium spirits and the bar's house ingredients (a five-year-aged Old Tom gin, three kinds of house bitters, a custom blend of vermouth). The Singing Bird Highball — Hakushu 12, fresh yuzu, Hokkaido soda — is the bar's signature and one of the better highballs in Asia. The Stirred Pandan Old Fashioned (bourbon, pandan-infused demerara, Angostura) is the second-strongest order.
Singing Bird is a listening-room bar. Phones away, conversation low, drinks slow. Two cocktails over a ninety-minute sit is the correct pace. The crowd is regulars and Asia-50-tourist drinkers; everyone knows what they came for.
Best time to visit: Weekday evenings before 9pm for a quieter version of the room; weekends after 9pm for the busier one. Reservations recommended where the bar accepts them.
