Our Take on February 30
· Hidden February 30 is the second-floor room above a vintage clothing shop on Pharaon Street, twenty seats and a deliberately quiet programme run by bartender Maya Geagea. The cocktail list runs to ten signature specs that change quarterly, all built on Lebanese ingredients sourced from the Bekaa: a sumac sour, a za'atar gimlet, a clarified labneh whey punch that has been on every menu version since opening.
The back-bar leans on Riachi gins, Massaya arak and a serious mezcal section that is unusual for the city. The room is whitewashed stone, deliberately under-lit, with a single rotating piece of contemporary Lebanese art. Fourth because the ingredient programme is the most considered in the city and because the room is one of the few in Mar Mikhael that genuinely encourages quiet drinking.
