Alchemy sits on Humboldt 1923 in Palermo Hollywood and refuses to pick a lane. It is an ice cream parlor that pours cocktails, a cocktail bar that freezes them, and a room dressed as a chemistry laboratory, complete with test tubes and a periodic table where every element stands for a flavor.

The conceit runs deep rather than cute. Buenos Aires Connect describes a menu of more than 60 flavors, 15 of them made with actual alcohol: Campari and orange, gin and tonic with cucumber, fernet with cola, and an Aperol spritz that arrives on a spoon instead of in a goblet.

The savory bench is just as bold. Beet with camembert, blue cheese with 80 percent dark chocolate, and avocado with wasabi all hold permanent spots, and the staff hand out tasters before you commit. Tell the cashier when you order the alcoholic line, since those tubs price differently.

The room itself earned a write-up from IMA Architects, who shaped the space around the Heisenberg lab fantasy: work aprons, beakers, and a counter that reads more dispensary than gelateria. After dark the same counter works as a bar, with a barman building frozen takes on the classics alongside the conventional versions.

Ordering takes a little strategy. Sizes run from the vasito up to take-home tubs, vegan options hold their own corner of the case, and the move for first-timers is to ask for three tastes before committing: one cocktail flavor, one savory experiment, one safe Argentine classic like dulce de leche.

Hours stretch further than almost any heladería in the city. Alchemy opens daily from 10am to 1am, pushing to 3am on Friday and Saturday nights, which makes it the rare Palermo Hollywood address that serves a first coffee and a last drink on the same day.

The location helps explain the concept. Humboldt runs through the heart of Palermo Hollywood, the old television district where production studios sit between parrillas and natural wine rooms, and the street fills nightly with diners drifting between courses. Alchemy positioned itself as the stop everyone agrees on.

It also belongs to a proud local tradition. Buenos Aires takes ice cream as seriously as any city outside Italy, a legacy of Italian immigration that put a heladería on most corners, and Alchemy reads as that tradition pushed to its logical extreme: the heladería that finally merged with the bar next door.

Among the best cocktail bars in Buenos Aires it plays the wildcard. Nobody will call this the city's most serious drinks program, and nobody needs to. It is the stop between dinner on Humboldt and a proper nightcap, and the one address in the neighborhood that delights children and bartenders equally.
