Bar Sur holds down the corner of Estados Unidos and Balcarce, and it has done so since 1967. This is San Telmo's oldest tango house, and it wears every one of those years on its walls.

The checkerboard floor, the bottle-lined shelves and the framed photographs have barely changed in decades, and that steadiness is the appeal.
