Hawksmoor's Edinburgh Cocktail Programme

Hawksmoor is the celebrated London steakhouse group, and the Edinburgh outpost arrived in 2017 in a Victorian banking hall just off St Andrew Square. The cocktail bar at the front operates as a serious cocktail destination in its own right.

The signature is the Beef-Fat-Washed Old Fashioned: bourbon clarified through beef fat, demerara, Angostura. The technique sounds gimmicky but produces a cocktail with a unique savory richness. The Anti-Fogmatic and the Marmalade Cocktail are also signatures from the original London menu.

The crowd is steakhouse diners pre-dinner and post-dinner, plus mid-thirties professionals using the bar standalone. Pair with Bramble a few streets away for the complete New Town cocktail evening.
