Hey Palu is Edinburgh's most theatrical Italian cocktail bar — built around Italian aperitivo culture, with a Negroni-driven cocktail program and Italian small plates. The 28-seat room is candlelit with reclaimed-wood seating and a long marble bar.

The cocktail program runs through 12 Negroni variations, plus classic Italian aperitivos (Spritz, Americano, Boulevardier). The Italian charcuterie and crostini menu pairs to the cocktails.
