Hamburg's Tokyo-Trained Highball Specialist
Boilerman Bar specialises in highballs — the long, bubbly, low-ABV drinks the Japanese have perfected. The room is small (24 seats), the bartenders are trained on Tokyo precision, and the highball glass is a custom-thin Riedel that magnifies the bubble. The whisky and gin lists run to 200+ bottles each.
The Yamazaki highball is built with hand-carved ice from a custom block, Yamazaki 12, and Suntory soda water poured at a 45-degree angle. Each highball takes 90 seconds to build. The bar is one of the few in Europe trained directly by Suntory bartenders.
Pair with Le Lion earlier for a classical evening before the Japanese precision.
