Niemann is the Sternschanze natural-wine bar that's quietly become one of Hamburg's most-respected wine programmes — a 250-bottle list with a strong German, Austrian and orange-wine focus.

The wine programme leans natural with a particular focus on small Mosel and Pfalz producers. By-the-glass list runs 30+ pours rotating weekly. Kitchen does small plates with a celebrated charcuterie and seasonal vegetable plates.
