Wyndham Street's specialist gin bar with more than 100 labels and a tonic list that takes itself seriously.

Origin sits on Wyndham Street in Central, the strip that has carried the city's bar scene for two decades. The room is built around a single proposition: gin, with more than a hundred labels lined behind the bar and a tonic list that the staff treat with the same seriousness. Time Out Hong Kong's review framed it as one of the more committed specialist bars in Asia and the city's most defensible answer to the gin-bar boom.

The bar opened in 2013 and has held the specialism while the surrounding street has rotated three or four times. South China Morning Post's Wyndham Street round-up rated it among the three on the street worth a visit. Anyone after a complicated whisky list or a beer is on the wrong door; anyone willing to let the bartender match a small-batch gin to a small-batch tonic will get the room's best work.

A narrow front room with the gin wall as the visual centrepiece, banquettes against the side wall, and a small back area that turns into the quieter seat after 9pm. Tatler Asia's profile flagged the bar's lighting as the reason the room photographs better than most on the street.

Order a gin-and-tonic and let the bartender choose the pairing; expect a 30-second conversation about Mediterranean tonics and a HK$140 bill that earns it. The signature cocktail list runs HK$160-200 and the Negroni is the second-most-ordered drink, by the bar's own count. Skip anything dark-spirit-led; the gin focus is the bar's argument and the rest of the list is supporting cast.

Finance professionals at the front bar from 7pm, a date-night and small-group crowd from 9pm, and a late hospitality crowd on Fridays. Wanderlog's review captured the pattern as approachable rather than precious, a useful distinction on a street that has both.
