Geyik occupies a corner on Akarsu Yokuşu, near the top of the hill in Cihangir. The same room operates - over the course of a single day - as a serious specialty-coffee bar in the morning, a working-from-the-cafe spot through the afternoon, an aperitivo bar in the early evening, and a cocktail bar at night. Three baristas in the morning become three bartenders by 7pm; the menu rotates with them. The visit changes depending on when you walk in. By hour.

From8am
The morning coffee bar
Specialty coffee — single-origin pour-overs and the bar's standing v60 selection. The room is quiet, mostly working laptops, breakfast pastries from a Cihangir bakery, fresh sourdough and a small egg menu. The right order is whatever the barista recommends from the rotating filter list. Closes the morning service around 11am.
From11am
The afternoon room
A working café - laptops, conversation at low volume, the soundtrack soft jazz. Sandwiches, a daily small-plate, more coffee, the first wines and beers from around 2pm. The transition between the morning and the evening identity. Not a destination at this hour; a working room.
From5pm
The aperitivo bar
The cocktail programme starts. Aperol Spritz, Negroni Sbagliato, an Italian Hugo built on elderflower and prosecco. The baristas are still on shift; the cocktail bartenders begin alongside them. A small Italian-style aperitivo plate arrives with each order — taralli, marinated olives, sourdough crostini.

The cocktail bar proper
The coffee bar closes. The room shifts: lights dim, music shifts to disco-edits and low-tempo electronic, the cocktail menu opens to its full twenty-drink list. The bar's house cocktail is the Cihangir Sour — gin, sumac syrup, lemon, egg white, dried rose petal. Order this first.
Until2am
The late evening
The crowd is the Cihangir-creative class - writers, designers, gallery staff. The bar gets denser; the music gets louder, but not loud enough to stop conversation. By midnight the venue runs at about 80% capacity through to 2am close. Closed Sundays.

Geyik is best experienced at two different hours on two different days - once in the morning for the coffee, once in the evening for the cocktails. The same room makes a different argument at each hour. The bar takes walk-ins; reservations are not accepted.
