Toca da Raposa - the fox's den - is the Príncipe Real cocktail bar that has done more than any other room in Lisbon to argue that Portuguese ingredients are enough on their own. Constança Cordeiro and Carlos Anaia opened it in 2019 with a menu built around what they could find within an hour's drive of the city. We spoke to one of the team on a quiet Tuesday at the long bar.
