The word alambique is Spanish for a copper distillation pot, and the bar has earned its name. Alambique sits on a quiet residential street in El Poblado, 45 seats across two rooms, and runs what we consider the most serious cocktail programme in Medellín. The bar team distils their own aguardiente base in-house, infused with Colombian botanicals harvested within 200km of the city.
The menu changes three times a year to follow what is growing. The current summer edition lists 14 cocktails built around lulo, maracuyá, corozo, and the region's remarkable array of wild citrus varieties. None of it is precious. The descriptions are short and honest, the proportions are calibrated, and the ice programme is better than any bar has reason to care about at this price point.
The space feels like a converted family home — which is exactly what it was before the current owner took it over in 2019. Terracotta walls, original floor tiles, a rear courtyard with trailing plants. The lighting sits at the exact point between too dim and too bright, which is harder to achieve than it sounds. On weekdays you can walk in; on Friday and Saturday, book a table by Instagram DM the week before.
Alambique has appeared on Latin America's Best Bars list in 2022 and 2023. We think the recognition is deserved and somewhat overdue. For anyone visiting Medellín specifically for its bar scene, this is the table to reserve. For anyone ending up at Alambique by accident, consider yourself lucky. The cocktail to start with is the Jardín Negroni, which replaces Campari with a house-macerated corozo bitter.
