wine · Modern Manon opened on Drummond Street in Carlton in 2021 and represents the second-generation Melbourne natural-wine room — smaller, sharper, and willing to push further into experimental Australian producers than even Bar Liberty does. Owner-sommelier Yana Stocker, a Bar Liberty alumna, runs a programme weighted toward Adelaide Hills and Pyrenees producers (Lucy Margaux, Konpira Maru, Brave New Wine) with weekly rotation and an unfashionable insistence on glass-temperature precision.

The room is twenty seats, the food is short and tightly executed, and the prices remain pre-acclaim. Ranks second because the cellar conviction is the freshest in the city and the buying perspective has earned the rest of the trade's attention.
