Handshake Speakeasy is the World's Best Bar 2024 — a hidden Roma Norte cocktail laboratory from Eric Van Beek and team. The entrance is unmarked, reservations are required two months ahead, and the cocktail menu changes seasonally with full tasting flights available.
The bartenders apply hyper-modern technique — clarification, fat-washing, custom ice, tableside theatrical builds. Every cocktail comes with a printed card explaining the ingredients and the historical reference. The bar room is intimate — 32 seats, dim, theatrical.
