Our Take on Bar Le Lab

Bar Le Lab is the cocktail bar that put Montreal on the serious drinks map. Opened in 2011, it was the city's first bar to treat its cocktail programme with the same rigour a restaurant applies to its kitchen — seasonal ingredients, original recipes, precise technique. Bar Le Lab defined what a neighbourhood cocktail bar could be.

The menu runs to 16 drinks split between booze-forward classics reworked with house ingredients and lighter sours built around Quebec produce. The Maple Old Fashioned — rye, Laurentian maple syrup, Angostura, orange — is the most Montreal cocktail on any menu in the city. The Nordic Sour brings aquavit, elderflower, and egg white together in a way that makes the combination feel inevitable.

The room is narrow, warm, and full of regulars who know the bartenders by name. Thursday evening hits the right pitch — lively enough to feel like an event, quiet enough to hear what you ordered.
