Co.So sits on Via Braccio da Montone in Pigneto, a neighbourhood that twenty years ago you would not have crossed at night and now contains some of the most ambitious small rooms in the city. It opened in 2013 under Massimo D'Addezio - long one of the most quietly influential bartenders in Italy - and it remains the bar where Rome's other bartenders eat their late dinners. Three questions cover most of what a first-time visitor needs.
Pigneto is east of Termini and a 12-minute taxi from Centro Storico; the C tram from Termini stops two blocks away. Reservations are recommended on weekends. Cards accepted. The bar is small - thirty seats in total - and fills with regulars early in the evening. Closed Mondays.
