North Park has become one of the most interesting drinking neighbourhoods in San Diego over the past decade, and Polite Provisions has been at the centre of that transformation since it opened in 2013. The room is built around a 30-seat circular bar — a design that encourages strangers to talk across the counter — inside a space that evokes a turn-of-the-century soda fountain without tipping into costume party territory.

The bar belongs to the same creative DNA as Noble Experiment and Raised by Wolves, though its character is entirely different. Where those bars are deliberate and secretive, Polite Provisions is open, neighbourhood-friendly, and — the name is doing real work here — genuinely welcoming. The drinks are serious. The atmosphere is not. This is the bar for a long Tuesday night with someone you want to talk to for hours, or a Saturday afternoon that turns into an evening without anyone quite noticing.

The menu leans heavily on spritz-style and lower-ABV cocktails without ever sacrificing depth. There are strong stirred options for those who want them, but the house style skews lighter and more citrus-forward — which, in San Diego's climate, makes complete sense.

The menu changes four times a year with the seasons, which makes repeat visits the natural rhythm for this bar. Each menu has a loose theme — the summer iteration typically leans on tropical fruits and sparkling wines, while the winter menu gets darker and more spirit-forward. The bartenders are reliable guides; ask what is new this week and they will be enthusiastic about it.

The San Diego Soda is the house signature: gin, elderflower, cucumber, and sparkling water over crushed ice, in a format that is genuinely refreshing rather than watered-down. The Burnt Orange Negroni — with a smoked orange peel rinsed across the glass — is the order for anyone who wants something serious. For the adventurous, the Bartender's Flip changes weekly: a rich, egg-yolk stirred cocktail built around whatever unusual spirit has come into the bar that fortnight.

Polite Provisions sits on 30th Street, the main artery of North Park, in a converted retail space that has been thoughtfully redesigned. White subway tiles, warm Edison lighting, and the circular bar create a room that feels both vintage and current without trying too hard at either. There is outdoor seating along the street for evenings warm enough to use it, which in San Diego means most of the year.

The crowd here is the neighbourhood: design professionals, musicians, people who work in food and drink, and a solid contingent of regulars who treat the bar stool as a desk extension. The atmosphere between Monday and Thursday is relaxed enough that you can hold a long conversation without shouting. Weekends get louder but never uncomfortable. This is the bar that North Park needed when it was building its identity, and the bar that has grown to reflect that neighbourhood's confidence since.
