Stone Brewing World Bistro and Gardens sits on Citracado Parkway in Escondido, about twenty five miles north of downtown San Diego, on the grounds of the brewery's headquarters. The setting is the draw. The bistro opens onto a one acre garden of stone paths, mature trees, koi ponds and fire pits, and the brewery itself runs behind glass at the back of the building. Stone IPA and the higher octane Arrogant Bastard Ale are both on permanent rotation, and the taproom is the best spot in the region to taste the limited and barrel aged releases that never travel far from the brewery. The crowd shifts with the clock. Weekday lunches pull a quieter mix of locals and brewery pilgrims. Last pours run to 10pm most nights and 11pm on Friday and Saturday.
Stone has brewed since 1996, when Greg Koch and Steve Wagner started the company in nearby San Marcos. The brewery moved to this custom built Escondido headquarters in 2006, and the World Bistro and Gardens grew up beside the brewhouse as a 300 seat showcase for the beer. It remains one of the largest craft breweries in the country, and Escondido is where the brand still tells its story best.
The brewery tour is worth building the visit around. Behind glass at the back of the building the production line runs in full view, and a guided walk moves from the brewhouse to the packaging hall before ending back at the bar. The Escondido taproom also gets first call on the small batch and barrel aged releases that rarely travel, so the board here runs deeper than any other Stone location. Plan an afternoon rather than a quick stop, and let the garden do the rest.
