· Modern The standing bar attached to Jefferson Rueda and Janaína Torres's restaurant is the only address in Centro that consistently draws sommeliers off-shift. The wine programme — built by Marina Bueno — is unapologetically Iberian and Brazilian, with a serious focus on Galician Albariño, Mencía from Bierzo and high-altitude Cabernet Franc from Caxias do Sul.
The glass pours are calibrated to the bar's pork-forward snack menu: chicharrón with pickled pineapple, sangue de porco on toast, a single faultless croquette. The room is loud, the service moves fast, and the prices are restrained for a kitchen with the Torres-Rueda name. Number four because it proves a restaurant bar can be a serious wine destination without leaning on a tasting menu, and because the Brazilian section here is the most considered in the city.
