Our Take on Gibson
The bar's signature serve is the Gibson Martini, named for the room: gin or vodka, dry vermouth, and a pickled pearl onion that the bar makes in-house each week. It is colder, drier, and shorter than the standard. The bartenders will let you choose the gin and the dilution if you ask.
The menu beyond the Gibson Martini leans Asia-via-Europe — local fruits, fermented bases, herbal cordials. Drinks like the Pandan Daiquiri and the Calamansi Sour are written for the Singapore palate but built to a London-bar standard. Nothing on the list is gimmicky and nothing is overlong.
The crowd is regulars, industry, and Asia-50 tourists who have done their homework. Walk-ins are welcome on weeknights before 8pm; everything later than that needs a booking. Two drinks here is an excellent evening; three is the start of a memorable one. The cocktail prices are mid-tier by Bukit Pasoh standards and well below what you would pay in Marina Bay.
Best time to visit: Weekday evenings before 9pm for the quieter version of the room; weekends after 9pm for the busier one. Reservations recommended where the bar accepts them.
