Operation Dagger is hidden in a small basement in Ann Siang Hill. The cocktail programme is research-led — the bar distills its own spirits, infuses its own bitters, and ferments its own ingredients. The cocktail menu rotates regularly and lists drinks by single primary ingredient (Pepper, Smoke, Acid, etc).
The drinks are technically precise. The bartenders explain each cocktail's research basis. The space is intentional — lightbulbs hanging from the ceiling, a single long bar, around 30 seats.
