Eau de Vie

Sydney's benchmark cocktail bar since 2010. Tableside theatre, rare spirits, and a drinks programme that continues to reward adventurous drinkers.

Sydney's most decorated cocktail room

Eau de Vie opened in 2010 and has won Australia's Bar of the Year at the Bartender Magazine Australian Bar Awards multiple times. The room is moody and intimate, approximately 40 seats arranged in booth-style seating around a central bar. Owner Michael Madrusan, who also opened The Everleigh in Melbourne, built the bar around rare spirits, tableside service, and a cocktail menu that changes with each season.

The bar sits on Darlinghurst Road between Kings Cross and Oxford Street, in a location that puts it at the centre of Sydney's most active bar neighbourhood. It does not look like much from the outside. Inside, the dark timber and candlelight create an atmosphere that makes every visit feel like an occasion, regardless of what you came to celebrate.

What to order

The signature Peanut Butter and Jelly Old Fashioned has been on the menu since opening day and remains essential. Made with bourbon, peanut butter-washed rum, and raspberry shrub, it is unusual in all the right ways. The tableside dry ice cocktails are theatrical but the theatre is in service of the drink, not the reverse. The back bar holds rare expressions including pre-Prohibition American whiskeys and vintage cognac that do not appear on many Sydney bar lists.

Ask the bartender to walk you through the whisky section if you have time. The selection of Australian single malts from distilleries including Lark and Archie Rose is well curated and gives the bar genuine local relevance alongside its international references. Spend AUD 80 to 140 per person for 3 to 4 cocktails.

Who comes here

A mix of serious cocktail drinkers, date-night regulars, and industry professionals. Eau de Vie is where Sydney bartenders go on nights off. The bar connects naturally with the broader Darlinghurst scene. For a full evening, begin at Eau de Vie for cocktails, then walk to the neighbourhood bars along Oxford Street or take a short taxi to The Baxter Inn in the CBD for a whisky nightcap.
