Bar Trench has been operating in Ebisu since 2009 and remains one of the most respected modern cocktail bars in Tokyo. The room is small — around 30 seats — with a long zinc bar and warm dim lighting. The cocktail programme leans modern rather than purely classical and the seasonal menu rotates four times a year.
The drinks are precise. The back bar is deep in absinthe, herbal liqueurs, and lesser-known European spirits. The Trench Old Fashioned uses a Japanese whisky float. The seasonal menu always includes a thoughtful original cocktail.
