Three Cocktail Programmes Under One Roof
Bar Trilogy occupies a converted Roppongi space and operates three distinct cocktail programmes in three rooms — the front classical bar, the middle modern bar, and the back rare-spirits room. Each room has its own bartender and its own approach.
The classical room runs immaculate stirred classics. The modern room rotates a seasonal menu of original drinks. The rare-spirits room has around 200 unusual bottles — vintage cocktail liqueurs, defunct distilleries, and Japanese craft spirits — that the bartender pours straight or builds into bespoke drinks.
The crowd is mid-thirties to forties Tokyo cocktail enthusiasts and visiting bartenders. The bar runs late — until 4am most nights. Pair with the wider Tokyo cocktail scene for a complete evening.
