Gen Yamamoto operates a unique format in Tokyo: an eight-seat counter where Yamamoto builds a four or six cocktail tasting menu in front of you. Each cocktail uses a different seasonal Japanese fruit or ingredient — yuzu, sansho pepper, kabosu, matcha, sake lees — and the courses progress from light to deeper flavors.
The cocktails are not photogenic and the room is intentionally simple — pale wood, no decoration, no music. The focus is the ingredient and the technique. Each cocktail takes 5-10 minutes to build and Yamamoto explains each one before serving.
